Sesame Garlic Spinach

I like to buy baby spinach at Costco or Walmart so that I have a lot. I love Spinach Salad for myself before dinner or for lunch to keep me on my diet track...

1 lb. fresh spinach
2-3 T sesame oil (Winco or the Asian Mkt for the best prices)
3 T soy sauce
1-2 T sesame seeds
1 clove garlic (pressed or finely minced)
1 green onion (chopped)
1 T sugar
drizzle of rice wine vinegar or fresh lime juice
black pepper

when the rest of dinner is pretty much ready to eat, heat a large frying pan with sesame oil (everything is approx. in this recipe, just estimate) on medium-high heat.

add your spinach and with tongs, mix as they cook down, turning the heat down a bit, add the garlic (garlic will burn up if you add it first), soy sauce and onion. Cook until it's shrunken but still bright in color. Remove from heat, add sugar, sesame seeds, pepper and drizzle with vinegar or lime juice. Eat right away, it get's cold fast.

  1. I made the roasted chicken tonight, and the spinach. Both very good! But HOLY COW that spinach was FANTASTIC!! I will be making that again and often :). Both my kids liked the chicken as well, which is rare, they usually complain about chicken. I won't be making the pad thai until Sat., I will let you know!
